The
essential derived from the celery seeds (specie- Apium
Graveolens L) (family- Umbeliferae or Apaceas) has an
abundance of flavour and odour with longlasting anddiffusive
characteristics. The oil contains major components d-limonene
(carvons: 60%), selinene (ca 10%) and pthalides (ca 3%)
as well as other minor constituents.
This oil is mainly used in flavours for variety fo processed
foods like soaps, meat preserves, bakery products. In
perfumery it is used in chypre and aldehydic perfumes
in which great care has to be exercised, over the concentrations
used.
