The
essential oil derived from the celery seeds (specie:
Apium Graveolens L.) (Family : umbeliferae or Apiaceas)
has an abundance of flavour and odour with longlasting
and diffusive characteristics. The oil contains major
components d-limonene (carvons-60%) selinene (ca 10%)
and pthalides (ca 3%) as well as other minor constituents.
This oil is mainly used in flavours for variety of processed
foods like soups, meat preserves, bakery products. In
perfumery it is used in chypre and aldehydic perfumes
in which great care has to be exercised, over the concetrations
used.
